We vinify grape variety by grape variety with a plot selection.
For 3 to 5 days we realize a pre fermentation and a cold maceration to extract colors and aromas.
After that we do a long maceration for several weeks using temperature control process for a better concentration of aromas. During this process we let natural yeasts operate
