Once the winemaking is finished we taste each vat and for each one we decide on the aging process according to the Cuvée.
There are 3 different aging processes: the vat, the oak barrel and the new ovoïd vat.
Vats
The aging process is a single grape variety process.
The duration depends on the vintage, varying from 1 to 3 years.

Oak barrels
The aging process is a single grape variety process. Depending on the Cuvée, it can last from 11 months to 3 years. We use French oak barrels. Every year we renew part of our fleet of barrels.
Ovoïd vats
Our permanent research of innovation and quality has led us to a new process of wine maturation: the ovoid vats. The Ovoids combine ancestral methods of wine maturation and innovations in terms of material in order to bring the micro-oxygenation targeted by the permeability of the material.
The first wine aged in these Ovoïdes is born in 2021.
